Approaching the end of alcoholic fermentation, the wine takes its purple red color.
RED GRAVES

Grapes, carefully sorted, then scraped completely then crushed to immediately release the juice and put it in contact with the grape skin very quickly. Substantial pumping are made at the beginning of fermentation and then, subsequently, two or three outages which extract, among others, phenolic compounds and aromatic compounds. At the end of fermentation we conduct a grape marc washing very soft and very slow, which allows us to obtain soft and fruity wines. The fermentation temperature is very important; we are fortunate to be able to regulate on demand. Normally we choose a temperature of 28 degrees.
Tasting is the only effective tool to determine the length of maceration. They typically last between 20 and 30 days.
WHITE GRAVES

We conduct a maceration to obtain a maximum aromatic complexity. The grapes are then gently pressed with a pneumatic press. The juice thus obtained is brought to a temperature of 6 degrees to perform a racking. A cold liquid stabilization of a week is made before the alcoholic fermentation is carried out at 18 degrees. The wine is then racked and kept on the lees for about two months.

The vintage white MAXIME is fully fermented in new oak barrels.
